Chia seeds, like flax seeds, are widely known as a “super seed” because of their absorption properties and their rich nutritional value.

Used by the Mayan, Incan, and Aztec cultures, chia is making a comeback in the health food industry. Chia is full of Omega-3s and Omega-6s, contains calcium, twice the amount of iron than spinach, twice the protein of any other grain, is made up of soluble fiber which aids in digestion, and it promotes energy while simultaneously aiding in quality sleep. Chia seed is even used by athletes because of its ability to increase energy and endurance!

Chia seeds also have the ability to absorb water up to 12 times its volume, which, when added to foods, can give the feeling of being full and satisfied for longer periods and aid in weight-loss! Click the link to read more about the amazing benefits of chia.

One of the ways chia seeds can be added to foods or beverages is by making it into a gel. Chia gel is flavorless, so it can be consumed on its own or when added to food, it can amplify the flavor. Chia gel can also be used as a substitute for eggs or butter and can also be added to puddings, smoothies, desserts, and even drinks to make a super food beverage!

Chia Gel Recipe

Making a chia gel is simple. All you need is water and chia seeds, either ground up or whole, however you prefer. (Note: grinding up chia seeds does not affect its nutritional value.)

Ingredients:

1/3 cup chia seeds

2 cups water

Directions:

Combine the seeds and water in a container and seal with a tight-fitting lid. Shake the mixture and allow it to sit for at least 10 minutes to absorb the water. Use a whisk to occasionally mix the gel to evenly distribute the seeds. Tip: you can use ground chia seeds to make a smoother gel. You can also experiment with the consistency of the gel and add more or less water to your mixture.

That’s it! It can last refrigerated in a sealed container for up to two weeks.

Add it to your favorite recipes or use it as an extender for sauces and dressings!  Enjoy!
